Watercress scented oil

Herbs such as parsley, basil, coriander etc. turn very well into juice, thanks to the extractor. Mixed with oil, this juice will keep for three weeks in the fridge and can be used as a seasoning for dishes
Ingredients
  • watercress
  • quality oil
Tools
  • juice cone
  • graduated tip
  • small glass vial with airtight seal (or ice cube bags if more quantity)
  • small funnel
Recipe
  1. Rinse the watercress
  2. In the extractor equipped with the juice cone and the numbered tip positioned on 5, squeeze the watercress juice.
  3. Pour it into a flask using a funnel.
  4. Pour oil on top and keep in the fridge for three weeks.
How to serve at the table

Sprinkle on raw or steamed vegetables, season fish, sauces, vinaigrettes, etc.
