Hazelnut financier

We know the famous almond financiers. Here, a variation, a little more fragrant, with hazelnuts.
Ingredients
  • 150 g hazelnuts
  • 200 g brown sugar
  • 90 g flour
  • 6 egg whites
  • 180 g melted butter
Tools
  • crusher cone
  • tip: none
  • financier mold
Recipe
  1. Preheat the oven to 180°C.
  2. Grind the hazelnuts in the extractor fitted with the grinding cone, without a shaping nozzle.
  3. Separate the egg whites from the yolks. Keep the yolks, for a custard for example
  4. Melt the butter over a very low heat.
  5. Mix the hazelnut powder, flour, sugar, egg whites, and lastly the melted butter in a container.
  6. Pour into the mold
  7. Bake for about 15 minutes.
