Quince juice

This juice is used to make cooked preparations, jellies, fruit pastes, etc.
- Wash the quinces with a vegetable brush or peel them.
- Cut them into 6 and remove the cores.
- Place the juice cone and the graduated nozzle. If the quinces are firm and juicy, leave the nozzle on 5. If they are floury, lower the nozzle to 2 or 3.
- Insert the quinces. If necessary, use the pestle (and only this tool!) to push the food into the gear.
Heat to make sweet preparations
